Ingredients: 500 g turkey mince (or beef, pork, chicken or quorn); 1 red onion (diced); 2 cloves garlic (chopped); 1 courgette (diced); 1 bell pepper (diced); 1 tbsp smoked paprika; 1 tbsp ground cumin; 1 tbsp dried oregano; 1 pinch chipotle chili flakes (optional); 45 ml tomato puree (about 3 tbsp); 45 ml olive oil; 12 g fresh coriander (chopped); 250 g cheese; 4 12 inch tortillas (or 8 average size); 200 g basmati rice (about 1 cup); 500 ml hot water; 1 chicken stock cube; 1 tin black beans (rinsed)
