Ingredients: 3 chicken breast (cut into 1 inch pieces); 1/2 cup plain flour; 1/2 cup cornflour; 250 ml vegetable oil; 200 g basmati rice (about a cup); 1 onion (halved, then cut into 2cm slices); 2 cloves garlic (sliced); 2 inches ginger (chopped); 1 green chili (optional - chopped); 150 g mangetout (halved); 10 g fresh coriander (chopped); 3 tbsp peanut butter (smooth ideally ); 3 tbsp sweet chili sauce; 2 tbsp light soy sauce; 1 tsp fish sauce; 50 ml water
