Ingredients: 200 g basmati rice (about 1 cup); 1 butternut squash (peeled, cut into 2 inch cubes); 2 onions (diced); 4 cloves garlic (crushed/finely diced); 1 inch ginger (grated/finely diced); 225 g halloumi cheese (1 inch cubes); 150 g peas (frozen); 1 tin coconut milk; 30 ml tomato puree; 2 tbsp curry powder (or paste); 1 tbsp garam masala; 0.5 tbsp paprika ((or smoked paprika is fine)); 30 ml olive oil; 10 g fresh coriander (for garnish); 15 ml honey (1 tbsp); 1 tbsp cornflour
