Ingredients: 2 kg chicken wings (jointed); 250 ml vegetable oil; 1 cup plain flour; 0.5 cup cornflour; 1 tsp cayenne pepper (optional); 1 egg; 500 ml milk; 2 tbsp vinegar; 45 ml olive oil; 2 cloves garlic (whole); 1 pinch thyme (dried is fine); 1 tbsp smoked paprika; 1 pinch chilli flakes; 1 tbsp honey; 1 tbsp tomato puree; 150 ml passata; 150 ml chicken stock (use a stockcube); 1 tbsp cornflour; 1 kg white potatoes (cut into wedges); 30 ml olive oil; 150 g olives; 50 g salad leaves
