Ingredients: 2 aubergines (sides trimmed, quartered lengthways); 15 g fresh basil; 150 g mozzarella balls (sliced); 15 ml olive oil; 1 garlic bread (garlic baguette - shop bought); 1 onion (diced); 15 ml olive oil; 2 cloves garlic (chopped); 2 tins chopped tomatoes; 1 tbsp tomato puree; 2 tbsp dried oregano; 0.5 tsp sugar; 900 g white potatoes (diced 1 inch cubes); 2 tbsp dried dill (or fresh, chopped); 80 g salad leaves; 0.5 red onion (thinly sliced); 2 vine tomatoes (cut into wedges); 1 avocado (flesh cut into random chunks); 15 ml olive oil; 30 ml cider vinegar; 30 tbsp dried oregano; 0.5 tsp salt (ideally sea salt flakes)
