Baked Seafood Risotto

Name: Oven Baked Risotto - Seafood

Ingredients: 300 g arborio rice; 350 g mixed seafood (frozen prawns, mussels, squid); 1 onion (diced); 3 cloves garlic (chopped); 15 ml olive oil; 1 tbsp smoked paprika; 0.5 tsp turmeric; 2 tbsp tomato puree; 150 g peas; 200 ml white wine (optional); 15 ml fish sauce; 600 ml stock (chicken or vegetable stock cube); 10 g fresh coriander; 1 lemon (cut into wedges); 2 pinches chipotle chili flakes (optional)

This low maintenance risotto is baked in the oven for total convenience; this one is seafood, but feel free to choose whatever flavour you like!
