Ingredients: 900 g white potatoes (peeled, and cut into 3 inch chunks); 45 ml milk; 1 knob butter; 600 g king oyster mushrooms; 15 ml olive oil; 1 knob butter; 1 sprig rosemary (or thyme); 1 clove garlic (lightly cracked); 50 g mushrooms offcuts (use the offcuts from the king oyster mushrooms, finely diced); 45 ml brandy (or skip if no alcohol); 60 ml double cream; 60 ml vegetable stock; 1 tsp cracked black pepper (or use green peppercorns for milder flavour); 2 onions (peeled cut into rings); 100 g plain flour (swap for Gluten Free flour if needed); 100 g cornflour; 200 ml sparkling water; 250 ml vegetable oil (for frying); 200 g fine beans (green beans); 5 g fresh parsley (chopped for garnish)
