Ingredients: 250 g rice noodles (dried); 30 ml vegetable oil; 1 onion (sliced); 2 cloves garlic (sliced); 2 inch ginger (grated/chopped); 570 g stir fry vegetables (mixed - pre-packaged); 2 tbsp soy sauce; 100 g spinach (baby leaves); 2 g thai basil (optional (couple sprigs)); 5 g fresh coriander (couple sprigs, chopped); 5 g fresh mint (couple sprigs, leaves chopped); 1 lime (juice squeezed); 4 tbsp fish sauce (optional (omit for vegetarian)); 1 tbsp brown sugar; 4 tbsp peanuts (lightly crushed); 1 red chili (optional); 15 ml vegetable oil (1 tbsp)
