Ingredients: 8 chicken thighs; 1 lemon (halved); 45 ml olive oil; 0.5 tsp sea salt; 500 g leeks (sliced into half moons); 400 g cannellini beans (1 can = 400g); 400 g butter beans (drained, 1 can = 400g); 10g g fresh parsley (chopped); 400 ml chicken stock (use stock cube); 1 baguette (to serve or serve on rice)

Incredibly easy but so delicious, lemony crispy chicken thighs on a bed of soft and sweet leeks with beans and squeeze of lemon
