Print Recipe Servings 4 EquipmentPre-heated oven 200FAN/220cbaking tray 4 MetricUS Customary Ingredients8 chicken thighs500 g potatoes halved and sliced (5mm thick) 1 butternut squash2 red onion 1/2 inch slices3 cloves garlic left whole400 g petit pois2 tbsp gravy granules15 ml olive oil5 sprigs thyme0.5 tsp salt InstructionsTray BakeSlice the butternut squash into 1cm half moons (see below on how to prepare the squash) add to a large baking tray along with the garlic, potatoes, thyme and onions.
