Ingredients: 500 g cold water frozen prawns (small ones); 1 onion (diced); 3 cloves garlic (chopped); 30 ml olive oil; 200 g basmati rice; 1 bell pepper (finely chopped (orange or red)); 500 ml hot water; 1 chicken stock cube; 2 tbsp tomato puree; 1 tbsp paprika; 2 tbsp dried oregano; 1 tbsp cumin; 2 tbsp cajun spices (shop bought); 0.5 tsp salt; 1 tsp chipotle chili flakes (optional); 340 g tin sweetcorn (drained); 10 g fresh coriander (ripped)

Super quick and delicious Cajun rice pot, if you enjoy chili go heavy with the chipotle flakes, goes well with a dollop of Greek yogurt
