Equipment
- 1 Rolling Pin
- 1 Mixing bowl
- 1 baking tray
- 1 Pre-heated oven 200FAN
Ingredients
Dough
- 200 g self-raising flour + extra for flour
- 200 g Greek yoghurt full fat
- 15 ml olive oil
Suggested toppings
- 1 onion peeled and diced
- 1 red pepper finely sliced
- 500 g Passata
- 100 g cherry tomatoes
- 30 g grated cheese cheddar & mozzarella mixed
- 1 tsp oregano
To serve
- 220 g Green leaf salad or light coleslaw
- 500 g potatoes cut into wedges, skin on
- 15 ml olive oil
- 1 tbsp paprika or any other spice
Instructions
- Pre heated oven to 200FAN
Pizza
- In a bowl, mix the flour, Greek yoghurt, olive oil, a pinch of salt until it forms a dough.
- On a floured surface, knead the dough for 1-2 minutes until smooth. Shape in a ball, place in the bowl, cover with a clean kitchen cloth and rest for 5 – 10 minutes while you prepare the toppings and chips.
Oven Chips
- Scatter sliced potatoes onto baking tray, drizzle with oil, salt and paprika and roast in oven for 30 minutes (shake them halfway through). Remove and keep warm once cooked.
Continue Pizzas
- While the wedges are cooking. Separate the dough into 2 larger or 4 smaller balls (this will be enough for 2 medium or 4 small pizzas). Roll the dough out until it is very thin (no more than half a cm). Place it on a lightly oiled baking tray, add sauce and your chosen toppings.
- Bake in the oven for 8-12 minutes (depending on the size of your pizzas) or until golden.
- Serve with a side salad, coleslaw or roasted vegetables such as courgette and peppers and enjoy!
