Tangy Pork Chops with Baked Potatoes

Ingredients: 4 pork chops; 1 tbsp smoked paprika (or normal paprika); 1 tbsp dried oregano; 500 g white potatoes (skin on, cut into random 1 inch chunks); 500 g sweet potatoes (peeled, cut into random 1 inch chunks); 2 red onion (sliced 1/2 inch thick); 15 ml olive oil; 400 ml chicken stock (1 stock cube); 2 tbsp honey; 30 ml vinegar (cider vinegar or malt); 1 tbsp butter; 1 tbsp flour; 5 g parsley (chopped for garnish)

Pan fried pork chops (but succulent!) with a tangy sauce everyone loves swerved with baked sweet and white potatoes.
