Meet Eddie Makuwaza, Retail Catering Production and Development Manager at University Hospitals of Leicester

Can you tell me about your background and what led you to pursue a career in the NHS?

I have worked in 5 Star hotels and Restaurants mainly in South Africa,, before moving to UK in 2022, of which I worked as a Sous Chef at Fortnum and Mason. I was looking for a work life balance environment, with an organisation where I can grow and contribute with my vast experience in the Hospitality industry, which is why I chose to join NHS.

Professional questions:

What does a typical day look like for you in your current role?

Each day is different, however I routinely check on the well-being of the teams on all 3 UHL sites either by being there physically or checking with the respective team leaders. I check my emails to make sure I am updated in everything happening in the Trust. I check to see if our teams are following compliance procedures. I also keep engaging with several stakeholders to see how best we can have an efficient department, as well as listening to our customer feedback and suggestions.

What are the most rewarding aspects of your job?

I guess it is seeing the dish that you have created being well received and people enjoying your creativity. Just looking at the restaurant full of people or even family, enjoying what you have created as a chef is just epic

What are the biggest challenges you face in your role?

Keeping to date with the ever changing expectations and regulations in the Food Industry. Our resources can be very limited which stops you from creating dishes that you would normally produce in a private restaurant.

How do you manage work-life balance given the demands of your job?

I am very fortunate to work in an environment that promotes work life balance, something that was missing in my previous job.

Can you share a memorable experience or patient interaction that had a significant impact on you?

When I created the menu and cooked for the current President of South Africa.

What skills or qualities do you think are essential for success in your field?

Communication Skills, assertiveness, compassionate leadership, problem-solving, leadership skills, approachable, flexible, adaptable, interpersonal skills.

What advice would you give to someone considering a career in the NHS?

NHS is the most diverse organisation in the UK. There are greater opportunities for career growth within the organisation through learning platforms like the Apprenticeships. It has the best benefits as well and best for work life balance.

Food and nutrition:

How do you ensure you maintain a healthy diet despite your busy schedule?

I have taught myself to disciplinary stick to a routine

How do you usually plan your meals given your busy schedule?

I have a folder in my phone where I put all my favourite meals and the ones the family love. I then use that to plan daily and weekend meals. I however still try new dishes on weekends.

For work we operate on a 4 week rotational menu

What kind of meals do you typically eat during your work shifts?

I love a mini version of English breakfast. Fried/Poached Egg, Bacon, Sausage and Hash Brown

What’s your favourite dinnertime meal?

Chicken Roulade with Polenta, Roasted Carrots and Tomato Sauce.
