Ingredients: 8 chicken drumsticks and thighs; 2 onions (diced); 2 bell peppers (red and green diced); 4 cloves garlic (chopped); 2 tbsp ground cumin; 1 tbsp paprika; 2 tbsp dried oregano; 2 tbsp tomato puree; 500 ml chicken stock (use stock cube); 300 g white potatoes (peeled and cut 1 inch cubes); 5 g fresh parsley (chopped for garnish); 100 g green olives (lightly chopped); 30 ml olive oil; 300 g brown rice
