Roasted Pumpkin Seeds

Roasted pumpkin seeds are delicious and a great way to use up those pumpkin seeds over Halloween.

So how do you clean pumpkin seeds before roasting them? Easy. 

Stick them all in a bowl, cover with water and swish them about a bit with your hands. The pumpkin seeds float to the surface while the rest of the stuff drops to the bottom. Carefully skim off all the pumpkin seeds and drop them onto a kitchen towel and dry.

Ingredients:

Handful or two of pumpkin seeds (cleaned as noted above)

1 tbsp olive oil

2 tbsp salt

Pinch chili powder

Method:

  1. Place the pumpkin seeds onto a baking tray and drizzle a little olive oil over the pumpkin seeds then liberally sprinkle with salt and a pinch of chili powder.
  2. Ensuring that most of the seeds are flat (i.e. not piled on top of each other) – pop into an oven at 160c and roast for about 60 minutes, depending on the size they may need another 20 minutes.
  3. Remove and let cool.
