Ingredients: 4 salmon fillet; 250 g spinach; 2 onions (finely diced); 10 ml olive oil; 900 g white potatoes (peeled, cut 1inch cubes); 1 knob butter; 30 ml milk; 30 g dates (stones removed, chopped); 20 g walnuts (bash with the bottom of a saucepan pan so they are crushed or in pestle and mortar); 1 tsp Dijon mustard; 3 g fresh parsley (chopped)

The date and walnut topping is so versatile and compliments salmon perfectly, especially with buttery mash and wilted spinach.
