Ingredients: 600 g rice noodles (pre-cooked in packet); 80 g rocket, watercress, spinach leaves (mixed bag); 30 g fresh coriander (ripped); 30 g fresh mint (stalks removed, leaves whole); 50 g nuts (cracked (mixed or any preference of nuts)); 4 inch ginger (grated); 1 clove garlic (grated (small clove)); 1 lime (juice squeezed); 30 ml fish sauce (use vegan fish sauce for vegetarian version); 0.5 tbsp sugar; 1 tbsp sesame oil; 2 tbsp olive oil; 2 tbsp cider vinegar; 1 tbsp light soy sauce; 1 red chili (chopped )
