Get the bread toasted, then butter it - but not too much; a little crunch is good.
Turn heat on pan and melt butter, whisk eggs season with salt and pepper.
Pour eggs into pan, move them about but not too much, just keep them moving a little. Once they are *almost* cooked through remove the pan from the heat (keep moving the egg), they'll continue cooking.
Add the mayo and mix it into the egg, divide it between the two pieces of toast - voila!
