Gourmet No-cook Christmas Dinner – Elsewhere

- Small bowl x2
- Chopping board + kitchen knife
- 100 g pre-cooked chicken or prawns or vegan faux chicken or halloumi
- 2 ready made tortillas
- 1/2 tin black beans
- Pinch dried herbs
- 50 g baby spinach leaves
- 60 ml cranberry sauce
- 1/4 red onion diced
- 15 ml water
- Mix all the cranberry salsa ingredients together and reserve
- Pour the black beans into a bowl and mash using the back of a fork (it's just to break them a little) season with salt and pepper and fold in a glug of olive oil. Roughly slice the spinach and line a serving bowl with it. Pour the coarsely mashed black beans over the top and place the main ingredient over the beans. Drizzle over the cranberry sauce and cut the tortilla into strips and leave sticking out the side of the bowl to serve.
You can add gravy to this if you have a kettle or microwave, by heating hot water and adding gravy granules to it!
