- non stick frying pan
- 4 eggs whisked
- 1 tbsp butter
- 30 ml mayonnaise
- 2 slices bread toasted
- Get the bread toasted, then butter it – but not too much; a little crunch is good.
- Turn heat on pan and melt butter, whisk eggs season with salt and pepper.
- Pour eggs into pan, move them about but not too much, just keep them moving a little. Once they are *almost* cooked through remove the pan from the heat (keep moving the egg), they'll continue cooking.
- Add the mayo and mix it into the egg, divide it between the two pieces of toast – voila!
